This article will ease your curiosity.

The name Gaplek City cannot be separated from the natural conditions of Wonogiri, especially the southern part, which is in one of the areas of Mount Sewu Karst consisting of limestone. The calcareous soils that are not suitable for producing rice and the unavailable water resources for irrigation cause agricultural activities in Wonogiri to be different from other areas. Then, the community planted cassavas. This is the forerunner of Tiwul Rice.

Well, this is the process of processing Tiwul Rice.

First, clean cassava. Then, peel cassava and cut it into pieces. Furthermore, pieces of cassava are dried by drying in the sun to become dried cassava or called Gaplek.

Second, the dried cassava is then processed into flour by pounding it or closing it in a mortar using a pestle. A mortar is a container for pounding made of wood. While the pestle is a tool for pounding. Now, there is a special machine that makes it easy to grind the dried cassava.

Third, cassava flour is ready to be processed into various types of food, the legendary Tiwul is one of them. How? The cassava flour is placed on a winnowing tray, then sprinkled with water while continuing to stir by hand until it becomes a granulated dough. Set aside the granulated flour. Repeat until all flour is granulated. Then, steam Tiwul in a pot for about 15-20 minutes (depending on how much dough you want to make) stirring gently so that it cooks evenly.

Once cooked, Tiwul can be removed from the pot and ready to be served according to taste. You can add sugar to make Tiwul sweet. However, usually, Tiwul Rice is served with grated coconut or pecel.

You can enjoy this unique rice at Wonogiri Market in front of Wonogiri Station at a relatively very affordable price. For those who come from outside the city, please use the Batara Kresna Railbus from Solo City to go to Wonogiri Station. Happy hunting for Tiwul Rice. (Wiwin)
